I shared this recipe a few years ago and it was a hit. Many of the dancers emailed to say they had tried and love this salad too. A few dancers asked me to share it again so I decided to share here today.

...And if you know me you know I love mangoes. There is nothing more yummy and tropical than a Mango, right? 

 

Vanessa's Scallops & Mango Salad 

Ingredients: 

A handful of mixed greens 

1 sweet mango

 1 avocado 

1/2 a red onion chopped 

1/2 cup chopped cilantro 

Feta Cheese Walnuts 

Optional: grilled scallops or shrimp on top. You can have it vegetarian or you can add grilled scallops on top as I love eating mine.

 

Dressing Ingredients:

Olive oil

2 tsp. Dijon mustard

A touch of turmeric power

A touch of garlic power

Salt and Pepper to taste

 

Instructions: Peel mango and cut into pieces about 3/4 inch square. Cube the avocado. Slice red onions as you like. Wash, dry, and chop cilantro. Combine mango, avocado, cilantro and red onions in a bowl.

Prepare dressing: Combine olive oil, dijon mustard, turmeric and seasoning to taste then whisk it to make a thin emulsion

Plating & Serving: Layer first a handful of mixed greens on the plate. Then add the mango, avocado, onions and cilantro mix on top. Using a spoon, add the dressing on top making sure to distribute it well over the entire salad. Add crumbled feta cheese and finally toss a few walnuts to taste. Serve immediately.
